With this difficult time associated with Corona it is very important to keep eating healthy, and to get the right amount of vitamins every day. Recently I ate a delicious salad with a friend that is tasty and also healthy. I decided to share this recipe with you so that we can all continue to eat a little bit of healthy food, although it is sometimes difficult to come up with healthy recipes.
The salad is richly filled with various ingredients. So you have something sweet, some sour, and some fresh in it. Yet the flavors all taste good together. And not to forget, this salad is super healthy!
For about 3 people.
- 1 Sweet potato
- 1 bowl of pomegranate seeds
- 2 avocados
- spicy chicken breast pieces
- 1 bag of lamb’s lettuce
- 1 handful of pumpkin seeds
- 1 lemon
- pepper and salt
- olive oil
Step 1: Peel the sweet potato and cut it into small cubes. Place a saucepan over medium heat and add some olive oil to the pan. Let this warm up for a while. Fry the sweet potato in the olive oil for five to ten minutes. Then add a little water around 300 ml, put the lid on the pan and let the potatoes steam for 10 minutes.
Step 2: Wash the lamb’s lettuce if it is not already washed and put it in a salad bowl.
Step 3: Add the pomegranate seeds, the pumpkin seeds and the chicken fillet to the lamb’s lettuce. You can buy strips of ready-made chicken (at the Deka market) or of course marinate yourself with olive oil and chili spices and then bake what you like). Cut the ripe avocados into small cubes and add this too.
Step 4: Making the dressing. Put about 100 to 150 ml of olive oil in a container. Cut the lemon in half. You can save the other half for something else. Squeeze half the Citroën with the olive oil. Add 1 tablespoon of honey, some salt and pepper and stir well. The dressing is now made. You can also add some garden herbs for some extra flavor.
Step 5: the sweet potato is now ready. Drain it, let it cool a little and then it can be added to the salad. If everything is in the salad, this can be left in the refrigerator for a while so that the sweet potato has cooled completely. When serving the salad, the dressing can be put on top and your salad is ready! Enjoy your meal!
How did I like the salad?
I loved it and the chicken and potato fill it well. You could eat it for lunch, or as a side dish with dinner. Do you have salad left? Throwing it away is a shame! Put it in a plastic container, and you can eat it the next day. Keep a little dressing, I would only put this on when you eat it, otherwise everything will be very weak and that is not so good.
